VEGETABLES - ROASTED PLANTAINS

3 pounds RIPE (yellowish black peel) plaintains
2 tablespoons oil
½ teaspoon salt

Preheat the oven to 400F.
Peel and cut the plantains into 1/2 to ¾ –inch slices. 
Toss the plantain slices gently with the oil and salt in a large bowl.
Grease a baking pan and put the plantain slices in a single layer.
Bake the plantains for about 12 minutes or until brown on one side, turn the slices over and bake for another 10 minutes or until brown.  Serve warm.
