FRENCH DRESSING (from France)



Makes about 12 ounces



1/4 cup sugar

1/4 cup apple cider vinegar

1 teaspoon prepared mustard

1 teaspoon celery salt

1 teaspoon paprika

1 teaspoon onion juice (or 1 teaspoon dried onion flakes)

1 cup salad oil (or 1/3 to ½ cup)

Juice of 1 lemon



Dissolve sugar in vinegar by stirring while heating slightly.

Add mustard, celery salt, paprika, and onion juice or onion flakes. Onion juice is made by finely chopping a piece of fresh crisp onion and pressing it through a strainer with the back of a spoon.

Drizzle oil into warm mixture while whisking vigorously or use a blender.

Lastly beat in the juice of one large lemon.

Store in a tightly sealed jar in the refrigerator.
