MUFFINS - ORANGE MUFFINS

Makes 12

1 egg
½ cup milk
¼ cup oil
½ orange, juice only (can use 1-2 juice orange, peeled, seeded, and pureed in a blender)
1 ½ cups flour
½ cup sugar (I use 1/3 cup)
2 teaspoons baking powder
½ teaspoon salt
1 tablespoon orange peel, grated
1/3 cup dried cranberries

Preheat the oven to 400F.
Beat egg, milk, oil, and orange juice together.
Sift flour, sugar, baking powder, and salt.
Add flour mixture to the egg mixture.
Add the grated zest of orange peel.
Add dried cranberries.
Fill greased muffin cups 2/3 full.
Bake for about 18-20 minutes.
Remove from oven to cooling rack.
