MUFFINS - CHOCOLATE CHOCOLATE CHIP NUT MUFFINS

 
16-18 regular sized muffins

2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 cups white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups milk
1 egg
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
3/4 cup chopped walnuts (optional)
1/3 cup whole almonds (optional)
1/4 cup white sugar (optional)

Preheat the oven to 350F.  Lightly grease a muffin pan or line with paper muffins.
In a medium bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt. 
In a large bowl, combine milk, egg, oil, and vanilla. 
Add dry ingredients to mixture in large bowl; stir well. 
Add chocolate chips and walnuts; stir well. 
Fill muffins cups to 3/4 full. 
Poke almonds on top of unbaked muffins.  Sprinkle with sugar.
Bake in the preheated oven for 20-25 minutes.
