COOKIES - COWBOY COOKIES


Makes 5 dozens

1 ½ cups butter, softened
1 ½ cups granulated sugar
1 ½ cups firmly packed brown sugar
3 eggs
1 ½ teaspoons vanilla
3 cups all-purpose flour
¾ teaspoon baking powder
1 ½ teaspoons baking powder
¾ teaspoon salt
1 cup chopped nuts
3 cups rolled oats
1 cup semisweet chocolate chips

Preheat the oven to 350 F.

In another bowl, whisk together flour, baking powder, baking soda, salt and nuts.


In a large mixing bowl with an electric mixer, beat together butter, granulated sugar, brown sugar, eggs and vanilla.


Add the flour mixture to the butter and sugar mixture.


Add chocolate chips and oats.


Chill dough in refrigerator for several hours. (I skip this step)


Roll dough into 1-inch balls. Flatten with palm of hand and put on ungreased cookie sheets. Bake in a preheated 350F oven for 8 to 10 minutes, or until done.


MY NOTE: Try it with 2 cups of chocolate chips.
