CAKES - APPLE LOAF CAKE



This dough is a little stiff to mix.  Add the diced apples as you chop the apples so the apples will release a little moisture and that will make the dough softer. 
 
3 cups sugar
¾ cup corn or canola oil
3 eggs, beaten
3 cups flour
3 teaspoons cinnamon
3 teaspoons baking soda
¾ teaspoon salt
2 teaspoons vanilla
6 cups apples, peeled and diced [1/2-inch cubes]
1 ½ cups walnuts, coarsely chopped
3/4 cup raisins

Preheat the oven to 350F.


Mix together sugar, oil, and eggs with a hand whisk. Add vanilla.
In a separate bowl, mix together flour, cinnamon, baking soda and salt.


Add the flour mixture to the liquid mixture. Mix well.


Add diced apples, nuts and raisins. Mix until apples, nuts and raisins are well incorporated into the dough.


Bake in 2 buttered and floured loaf pans for about 60-65 minutes or until done.


Cool for 10 minutes and remove from pans onto cooling rack.

Makes 2-8.5 x 4.5 loaves
